Temperature Control System*
The Banner-Day
Temperature Control System* represents state-of-the-art technology in
industrial and commercial bakery oven temperature control.
Use of a DSI
ignition system in combination with a PLC-based controller systematically and precisely controls specific oven zone temperatures:
- Banner-Day's dual element control scheme
turn off burners in small or select groups within each zone
based on firing rate of the burners.
- As the zone air header pressure
(firing rate) falls in response to an increase in zone temperature above the set-point, several burners are turned off,
allowing the remaining burners to carry the load of the "off"
burners. This will be repeated if the header pressure continues to fall.
- As the zone
air header pressure increases in response to a decrease in zone temperature below set-point, and the
burners will begin to be turned back on. The result is an effective zone turndown ratio of nearly 12:1.
- Balance
is quickly achieved between the number of lit burners and the zone heat load, with a zone air header
pressure that maintains lateral heat control and burner efficiency.
- The final result of this strategy is
a system that has the ability to maintain oven zone temperatures within ± 2°F of set-point.
In cases when less-precise
temperature control is necessary, a single-element temperature control scheme is used in place of the PLC. This also reduces
cost.
